Red Spinach Stir Fry | Senkeerai Poriyal is a healthy and tasty recipe from
South India. This Poriyal goes well with Rice varieties, Red Spinach is rich in Vitamins, Minerals and acts as a antioxidants. It
supports to improve the immune system of our body. Red Spinach is
rich in fiber and very low in calorie and high in nutrition.
Ingredients :

- Red Spinach (Senkeerai) 2 big bunch
- Small onion 15 No
- Dry red chilly 2 No
- Oil 1 Tbsp
- Grated Coconut 4 Tbsp
- Salt
- Clean and wash the Red Spinach (senkeerai) well.
- Chop the onions into small pieces.
- In kadai add oil,when the oil became hot add the dry red chills and onions.
- When the onion became transparent add the Red Spinach (senkeerai )and salt .
- Cover with lid and keep the flame as low.
- Leaves for 5 minutes the water in the keeari will comes out.
- Now add little amount of water to the keerai.
- After the water evaporate, add the grated coconut and switch off the stove.

Egg Masala Fry
Egg Masala Fry
Ingredients
- Egg 5 No
- Big Onion 2 No
- Chilly Powder 2 Tsp
- Gram Masala Powder 1Tsp
- Curry leaves 1 Strands
- Coriander leaves 1 Tbsp
- Salt
- Oil
- Turmeric Powder 1/4 Tsp
- In a vessel put the eggs and add water to it.
- Now boil the eggs,when the eggs hard-boiled clean the shell.
- Cut the hard-boiled eggs into small pieces and keep it aside.
- In a pan add oil,when the oil became hot add onions .
- Fry the onions until become transparent .
- Add the masala powders fry for a minute.
- Now add the eggs,coriander leaves and salt.
- Give gentle stir and fry for 5 minutes.
Add the curry leaves at last
.it gives nice aroma.

Ingredients :
Cauliflower 300 gm.
Onion 1 No.
Tomato 1 No.
Ginger Garlic Paste 2 Tbsp.
Garam Masala 1 Tbsp.

Turmeric Powder 1/4 Tsp.
Cumin Powder 1 Tsp.
Oil 2 Tbsp.
Coriander Leaves 1/4 Cup.
Salt to taste.

- Clean And chop the Cauliflower into small pieces.
- Wash and cut the Onions and Tomato's.
- In a Kadai add oil,when the oil is hot add chopped Onions and Ginger Garlic paste,fry until the raw smell goes.
- Now add the chopped Tomato's,fry until it became mashy.
- Now add the Cauliflower,Salt and Turmeric Powder,give a gentle mix leave it for 2 Minutes,the water in the Cauliflower will comes out.
- At this stage add the Chilly Powder ,Cumin Powder,Coriander Leaves and Garam masala Powder,mix it well for 1 Minute
- Now add water and cook the Cauliflower well.
Cooking Tips :
Give it a stir from time to time. Add water if you feel needed..
Serving Tips :
Garnish with some Coriander leaves and serve hot.

- In a bowl add the Egg, finely chopped Onion, Coriander leaves and Salt.
- Whisk the Eggs until well mixed.
- In a pan add oil and pour the beaten Eggs.
- Turn the omelet to cook it on another side.
- Cut the omelet into big pieces.

- Grind the Coconut and Cashew nuts.
- Wash and Chop the Onion and Tomato
- In a kadai add oil, when the oil become hot add Ginger Garlic paste and Onion
- Saute until the Onion become transparent, then add the Tomato
- When the Tomato mashed well add the Salt, Grinded paste, Garam masala, Red Chilli powder, Turmeric powder and Water
- Keep the flame slow for 15 minutes, boil it well
- Now add the Omelet into the curry and Cook for 2 minutes without stirring much in low flame.
Cooking Tips :

Buttermilk - 400 ml
Shallots(Small Onion) - 5
Curry leaves - 1 Strand
Mustard seeds(kadugu) - 1/4 tsp
Black gram(Urad dhal) - 1/4 tsp
Asafoetida(Hing) a pinch
Coriander leaves - 2 tsp
Ginger chopped - 2 tsp
Turmeric powder - 1/4 tsp
Oil - 1 tbsp
Ingredients to Grind
Raw rice - 1 tsp
Split Yellow Lentils(Toor dhal, Tuvaram Parupu) - 1 tsp
Chickpeas(Chana dhal, Kadalai parupu) - 1 Tsp
Cumin seeds(Jeeragam) - 1 tsp
Grated coconut - 1 Tbsp
Green chilly - 2
Preparation Method:
- Soak the Rice, Toor dhal and Chana dhal for 15 minutes.
- In a mixer grinder add the soaked Rice, Toor dhal, Channa dhal, Cumin seeds, Grated coconut and Green chilly grind into fine paste.
- In kadai(pan) add the Oil when the oil is hot add the Mustard seeds, Urad dhal, while spluttering add the Hing and curry leaves.
- Then add the chopped Onion and ginger fry it well.
- Add the Grinded paste mix it well.
- Finally add the Buttermilk mix it well and switch off the stove.
- Buttermilk Curry - More Kuzhambu is ready for serve.
Before adding the paste you can add Boiled Bottle-guard, white Pumpkin.
You can also add Okra(Ladies Finger) fry it in oil and add it.
Instead of Buttermilk you can use Yogurt diluted with water.
Serving Tips
Serve with Rice for lunch with some Pappads and Pickles .

Carrot Yogurt Raita | Carrot Thayir Pachadi | Gajar ka Raitha
Raita or Raitha is a popular and healthy Indian salad recipe with Yogurt(Curd or Thair or Dahi) and Vegetables like Carrot, Cucumber, Tomato even with Cabbage or Spinach and flavored with variety of seasonings to make different types of Raita's. Preparation Method:
- Take the Carrot and Peel off the skin then grate the Carrot.
- Take the Yogurt in a Bowl and beat well, Keep aside.
- Cut the Onions in Lengthwise or finely chopped.
- Finely Chop the Coriander leaves and Green Chillies.
- Add all the above vegetables with the Yogurt then Add some salt and mix well.
- Finally if you like add pinch of Chat masala
Serving Tips :
Serve as a side-dish with any Rice variety or with any Spicy Gravy for Roti or Paratha.
Cooking Tips:
If you do not like raw carrots then Par-boil the carrots for 1 minute, squeeze the water out and add into the yogurt.

Spicy Egg Noodles with Vegetables
Noodles Recipe is very popular and easy to cook dish. Today I will show you how to make Tasty Egg noodles with mixed Vegetables in my Style.

Ingredients:
2 pack Noodles
2 Eggs
1 Onion
1 small Tomato
1/4 tsp Chilli powder
2 tsp Curry powder
Mixed vegetables (Carrot,Bell pepper, Cabbage, peas)
Salt for taste
Coriander leaves
2 tsp soy sauce
1 tsp Paprika( Optional )
Steps to Prepare
In a pan add oil ,sliced onion fry until onion became transparent
Add the tomato and fry well
Add other vegetables (Carrot, Bell Pepper, Cabbage, peas) and mix well
Add the above mentioned powders and paprika and mix well, simmer the flame and cook for 5 min
now add enough water bring to boil ,put the Noodles and mix well
Then Add Soya Sauce and coriander leaves Mix everything well.
Cook it well until the noodles became like single thread
Crack the eggs and pour it into a cup and add a pinch of salt and slightly mix it.
Take another Pan, heat a tsp of oil and then add the egg and make it scrambled
When the egg cooked well then add and mix well with the Noodles.
Cooking Tips
Make sure that the vegetables should be half cooked
The Vegetables can be of your choice.
Serving Tips
Serve hot with Tomato Ketchup.

Aloo Poori Masala / Potato Gravy
Aloo Poori masala also called Uralai kilangu masala in Tamil is one of the Traditional and Famous breakfast Recipe in all over India with some small variations but here I have Prepared Aloo Masala in South Indian style. This masala is a perfect side dish for Poori ( Deep Fried Chapati ).
Ingredients :

- 3 medium sized potato's
- 1 onion
- 1 small tomato
- 2 green chillies
- 1 dry red chilli
- Few Curry leaves
- 1/4 tsp turmeric powder
- 1/4 tsp mustard seeds
- 1/4 tsp urad dhal
- 1/4 tsp Bengal gram
- Coriander leaves
- Salt to taste
Preparation :
Boil the potato and mash it well, In a kadai(Pan) add Oil, when the Oil is hot add the Mustard seeds, Urad dhal and Bengal gram fry it well Now add green chillies, dry red chilli, curry leaves and coriander leaves Add the chopped onion and tomato, fry well until the tomato's are well cooked, Now add peeled and mashed Potato and Turmeric powder, mix it well.
Serve with Poori or Chapati

Onion Bonda / Chickpea Fritters
Onion Bonda is a crispy, yummy and tempting appetizer, which is a popular evening snack in South India particularly in Tamil Nadu and Andra. Hot bonda with monsoon or winter will be a perfect choice.
Ingredients:
2 1/2 cups Chickpea flour/Besan/Kadalai mavu.Ingredients:
1 Finely chopped Onion.
1 tsp Red chilli powder.
1 pinch baking soda.
1 pinch Asafoetida/Perungayam (Optional).
1 strand Curry leaves.
2 Green Chilli's.
Salt to taste.
Oil for deep fry.

Preparation :
Heat oil in a fry pan in medium heat, when it gets hot using the spoon drop a small ball like portion directly into the hot oil, fry in oil until the Bonda become golden in color.

Hyderabadi chicken 65 recipe
Hyderabadi chicken 65 is a popular Hyderabadi recipe which is rich in taste, there are different stories about the name of the dish chicken 65.
Ingredients:
Item 1: Dry Fry
Preparation:
Clean and wash the chicken well
Marinate the chicken with all above ingredients
Leave for 30 min in fridge
Deep fry the chicken until it became golden color
Item 2 : Sauce (Gravy)

In a kadai(Pan) add oil,when the oil became hot add the seasoning
Now add the curd & red chilli powder,garam masala powder
To this mixture add the fried chicken mix well until the chicken absorb the curd well.
Garnish with Coriander leaves and Curry leaves and Serve hot.

- 1 Tbsp Ginger garlic paste
- 3 Tbsp Onion paste
- 1 Tbsp Red chilli powder
- Garam masala powder

- 1 Tbsp all purpose flour
- 1Tbsp Lemon juice
- 1 Tsp Turmeric powder
- Oil for deep frying
- Food color a pinch (Optional)
Clean and wash the chicken well

Now add the curd & red chilli powder,garam masala powderTo this mixture add the fried chicken mix well until the chicken absorb the curd well.

Aapam or Appam recipe with Fresh Coconut Milk
Appam is delicious and easy breakfast recipe, which is popular in south India particularly in Tamil Nadu and Kerala.
Ingredients:
250 gm/1 cup raw rice (pacharisi)
3 Tbsp Urad dhal
5 tbsp grated coconut
3 tbsp cooked rice
Salt for taste
Preparation :
- Soak the rice and urad dhal for 6 hours
- Wash the rice well
- In food processor add the soaked rice, urad dhal, coconut and cooked rice then
blend it into smooth batter
- Leave the batter aside for 5 hours
- After the batter fermented add salt mix it well.
- In an appa kadai(deep non-stick pan) pour the batter and spread the batter thinly then close the lid.
- cook it well (No need to add oil if you are using Non-stick kadai).
- Serve with Sweetened coconut milk.
Sweetened fresh Coconut Milk
- 2 Cup Grated Coconut
- 2 Cardamom
- Sugar as per taste
- Water as required
In a blender add grated coconut,Cardamom and add water
Grind the coconut mixture to a good paste
Strain the coconut paste by adding little water this is the thick milk
Repeat the process to thin milk
In a bowl add the thick and thin milk and required amount of sugar
Coconut milk is ready to serve with Aapam.

Pudhina Pulao / Mint leaves Rice
Pudhina Pulao
Pudinah pulao is a famous Indian recipe with different styles in different regions in India,
this is south Indian style of Pudhina rice.
1 1/2 cups of Basmathi rice
1 inch of cinnamon stick
2 Cloves
3 Cardamom(Ellachi)
1 Big Onion
1 Cup of Green peas
1 Cup of Pudhina leaves (Mint leaves)
1/2 Cup of Coriander leaves
3 Green chillies
3 tbsp of Grated Coconut
3 tbsp Ghee (Clarrfied butter)
2 tbsp Oil
Salt
Water
For Grind
In a Mixer cup take the pudhina leaves (Mint leaves), Coriander leaves, Green chillies, grated coconut and grind into smooth paste
Preparation
Wash and soak the rice in water for 30 minutes.
Heat the vessel add the ghee and oil then add the cinnamon stick, cloves and Cardamom. After the spice spluttered add the sliced onion, fry it until became trasnparent, Now add the grinded paste and green peas fry untill the raw smells goes, now you will feel the aroma of the fried masala then add 2 cups water and bring to boil, finally add the rice, put on medium flame.
Delicious pudhina pulao is ready.
Serve with Raita.
Note:
For 250 gm of rice add 500 ml of water i.e., 1:2 ratio

Urad dhal Vada / Medhu Vadai / Ulundu Vadai
Medhu Vadai/Ulundu Vadai is a popular snack of South India. You can find it in all South Indian festivals; Let us see how to prepare tasty Medhu Vadai/Ulundu Vadai.Ingredients
2 cups of Urad dhal/Ulundhu/ Black gram
1 Big Onion
3 Green chillies
½ inch Ginger
1 strand Curry Leaves
Coriander leaves
¼ tsp Asafetida
Salt to Taste
Oil to deep Fry
Preparation
Take skinless Urad Dall; wash and Soak in water for 1 to 2 hours.
Grind the soaked urad dal like a thick batter. While grinding mix water slowly like sprinkle the water (Don’t grind for long). Make the batter not too thick not too runny.
Finely chop the Onion, Green chillies, Ginger, Coriander leaves and Curry leaves. Mix all in the batter along with pinch of Asafetida and salt.
In a Fry Pan add oil and heat it, then take some amount of batter on your hand and make a small hole in the center using your thumb and drop it in oil.
Deep fry until become golden brown.
Serve hot with any chutney or Sambar or even with Ketchup.

1 tsp Coriander powder(Optional)
Preparation:
- Clean the fish and slice into pieces.
- Marinate fish with all the above ingredients and refrigerate it for 30 min.
- In a fry pan add oil, cook the fish pieces on medium heat both the sides until became crispy.

Why don't we trust nature? It can very well be our doctor

Tulsi for cold, dhurva for longevity, bilwa for cleansing, vallarai for memory power, curry leaves for indigestion and good hair growth and a host of other herbs are the saviours from tiny ailments in villages.
An apple a day keeps the doctor away. A garlic clove a day chases asthma away. A carrot a day keeps the ophthalmologist away . . . a dentist away and cancer away. Deep breathing exercises 20 minutes a day can keep most diseases away. A few yogasanas a day can keep most diseases away.
These are some of the sayings that we don't trust. Everyone one of us has some health ailment or the other. Some have severe headaches, others develop breathing problems, yet others get serious problems such as heart or lung ailments. But have you ever taken an apple or carrot a day as you must have learnt by heart in your primary school?
We don't trust nature. Most of us do not drink rainwater. Rainwater may be slightly contaminated with dust and other chemicals on the first day and from the roof that may be coated with chemicals, but one can harvest it directly from the skies. Keep a clean tub right in the open on the terrace. This can be done the second day of heavy rain. The first day, the water from the skies can wash away dust and other particles in the atmosphere. Then it can be double-filtered and stored in huge drums. This water can be filtered again for drinking.
One must experience the taste of rainwater. It is heavenly. An Australian study has confirmed that rainwater is very much safe for drinking and other household purposes and does not cause any illness. Most people have installed a rainwater harvesting system but use this water for bathing and washing and rarely for drinking.
Children love the rains. They love snapping those bubbles and having a bath. But today you find a lot of elders shooing them away from having fun in the rain all because they think they will catch a cold. Don't you get a cold even when you don't bath in rain? Your hair shines so well after a bath in rain/rainwater.
Working late or watching movies most of us have lost the habit of waking up early and doing some form of exercise. Schools back in the 1960s had morning prayer and some exercises in the open sunlight for about half-an-hour. Although yogasanas and breathing techniques have gained importance (more in the West), we turn to them for style, or when we have some ailment that refuses to budge with our popping pills.
Ancient texts kept at the Saraswathi Mahal library in Thanjavur, Tamil Nadu, about breathing exercises have this to say. Practising a certain type of deep breathing while studying (alternate right and left nostril breathing) can improve memory power and help you retain whatever you are studying. This text says that breathing should be practised on an empty stomach pretty early in the morning (studying early in the morning some time before sunrise). The text says that this way, you cannot forget whatever you have read. This is because the oxygen that enters your body clears congestion in the brain and enables it to retain whatever you have read with concentration in memory.
Deep breathing exercises practised just for about 10-20 minutes a day can improve eyesight, cure constipation, ward off most diseases. A person practising Asanas rarely gets any degenerative disease. It is advisable to learn these breathing exercises and yogasanas from a practitioner as there are rules about doing the same and they can cause harm if done in haste or on a heavy stomach or when ill.
While you can get rid of most skin problems by taking a sun-bath, we have the habit of seeing the sun when we travel to our workplace and on weekends after a late breakfast. Suryanamaskars have become a religious sign or practised to help us rid ourselves of paunches.
We use polyester garments and rarely expose ourselves to cool air or sunlight. The fresh air can give you a cold or fever. We get the idea that standing in cool air can give us a cold whereas overeating and eating junk foods or drinking colas cannot.
A lot many people are scared of tasting seasonal fruits. Mangoes are a ‘no' ‘no' for fear of our sugar levels rising or our getting diabetes. Whoever said fruits will usher in diabetes, and not a sedentary lifestyle and wrong eating habits? Bananas no, potatoes no, carrots no. There are a lot of self-analysed ‘Nos.'

Lemon Rice South Indian Style
Lemon Rice is a simple and traditional Recipe in South India. This recipe can be prepared in just a few minutes. Lemon Rice is a good for lunch.
3 tbsp Lemon Juice
2 cup cooked Rice
¼ tsp Mustard seeds
¼ tsp Splitted urad dal
1 Onion
2 Green chilies
2 dry Red chilies
A pinch of turmeric powder
2 tbsp oil
1 strand curry leaves
Salt as for taste
Preparation:
In a kadai/pan add the oil and heat it; add the Mustard seeds, Spitted urad dal and curry leaves.
After spluttering add finely chopped Onion, finely chopped Garlic cloves, dry red chilies, chopped green chilies; Fry till the Onion became transparent.
Add turmeric powder, salt and sauté for few seconds then add the lemon juice; and cook for few minutes in low flame until the Onion turns in pink color.
Finally add cooked rice and mix well.
Lemon Rice is ready for serve.
Note: you can add any nuts like Peanut (Ground Nut) or cashew nut while adding onion.
