Moong dhal/Simple Pasipayaru sambhar.
Ingredients:
Preparations :
- Moong dhal/Pasipayaru 1 1/2 cup
- Small onion 10 No
- Turmeric powder 1/4 Tsp
- Tomato 1 No
- Curry leaves 1 strands
- Gingelly oil 2 Tsp
- Dry red chilly 4 No
- Mustard seeds 1/4 Tsp
- Astofedia
- Cumin seeds 1 Tsp
- Salt
- Garlic 3 pods
- Oil 3 Tsp
Preparations :
- In a vessel add the moong dhal,Turmeric powder ,Gingelly oil, garlic and enough water.
- Cook the dhal until it become soft.
- Heat a kadai add the oil,when the oil become hot add mustard seeds ,cumin seeds ,curry leaves ,dry red chilly fry it well.
- Now add the onions and tomato cook well until tomatoes became mashy.
- Add the cooked moong dhal and salt.(don't discard the water of moong dhal add that water also).
- Let it boil for 5 minutes.
- Adding coriander leaves and green chilly is optional.
- Now moong dhal sambhar is ready.

Hyderabadi Kichadi Rice
Ingredients :
- Basmati rice 1 Cup(250 grams )
- Cinnamon 1 Stick
- Cardamom 5 Pods
- Cloves 4 No
- Cumin seeds 1 Tsp
- Big onion 1 No
- Green chilly 3 No
- Coriander leaves 1/4 cup
- Mint leaves 1/4 cup
- Curry leaves 1 strands
- Turmeric powder 1/2 Tsp
- Masoor dhal 1/2 cup
- salt
- Ghee 2 Tbsp
- Oil 2 Tsp
- Ginger garlic paste 1 Tbsp
- Wash and soak the rice and masoor dhal for 30 minutes .
- Cut big onion into long slice.
- Chop the green chilly ,coriander leaves and mint leaves.
- In a vessel add oil and ghee,when it become hot add the cinnamon ,cardamom ,cloves and cumin seeds.let it splutter well.
- Now add the onion,when the onion become transparent add ginger garlic paste fry until the raw smell goes.
- Add the green chilly ,coriander leaves and mint leaves fry well
- Now add Turmeric powder ,salt and 2 1/2 cup water to the vessel .
- Let it boil,after add the rice and dhal cook well until the rice is done.
- The ratio is 1:2 (1 cup = 2 cup )
- Here for the dhal i added 1/2 cup extra water.
- Measure the water in the same cup that u measured rice.

Varagu Arisi Adai / Kodo Millet Adai
Ingredients :
- Varagu arisi (Kodo Millet Adai) 1 cup
- Urad dhal 1/4 cup
- Channa Dhal 1/4 cup
- Toor dhal 1/4 cup
- Moong Dhal 1/4 cup
- Fenugreek seeds 1/2 Tsp
- Garlic 3 pods
- Dry red chili 2 No
- Big Onion 1 cup
- Curry leaves 1 strands
- Green Chilly 2 No
- Salt to taste
- Coriander leaves 3 Tbsp
- In a vessel add varagu arisi,urad dhal ,channa dhal,toor dhal, moong dhal, fenugreek seeds,garlic,dry red chili.
- Wash the above ingredients well and soak in the water for 5 hours.
- Now drain the water and grind into batter.
- This batter no need to fermented.
- Chop the big onion,curry leaves ,green chilly,coriander leaves into small pieces.
- Add the chopped things to the batter and salt to taste.
- Mix well,Heat the dosa pan pour the batter into dosas
- Drizzle some oil on top of the dosa and cook both sides well.
- Serve with chutney.

- Dry red chilly 2 No
- Oil 1 Tbsp
- Grated Coconut 4 Tbsp

- Clean and wash the Red Spinach (senkeerai) well.
- Chop the onions into small pieces.
- In kadai add oil,when the oil became hot add the dry red chills and onions.
- When the onion became transparent add the Red Spinach (senkeerai )and salt .
- Cover with lid and keep the flame as low.
- Leaves for 5 minutes the water in the keeari will comes out.
- Now add little amount of water to the keerai.
- After the water evaporate, add the grated coconut and switch off the stove.

Ingredients :
- Dates Paste 1 Cup
Almonds and Raisins 1/2 Cup - Baking Powder 1 Tsp
- Baking Soda 1 Tsp
- Vanilla Essence
- Sunflower Oil 1/2 Cup
- All Purpose flour 1 and 1/2 Cup
- Milk 1 Cup
- Sugar 2 Tsp (optional) or sugar free 1 packet (optional)

- Take the Almonds and chop into slices
- Boil the milk and keep aside ,while the milk is in warm temperature add this to the mixing bowl and add the dates paste.
- Whisk this mixture without any lumps
- Now add the baking powder, baking soda, vanilla essence, almonds, sugar, raisins and oil and mix it well.
- Take the cake mold apply some oil and dust withe flour
- Pour the mixture to the cake mold
- In a preheated oven keep the cake inside the oven and bake it for 180 degree for 30 to 45 minutes .

* You can add any sugar free as a optional.
* You can add low fat butter as a optional.
* If you like Eggs add 1 egg.
For kids:
You can use whipping cream for decoration with some fruits so kids will like to eat.

- Wash and cut the Potatoes and Brinjal into bite size pieces.
- Wash and cut the Drumsticks into 3 inch pieces.
- In a kadai add the oil, when the oil became hot add mustard seeds, urad dhal and curry leaves; allow to splutter it.
- Then add chopped Onion; fry it well until became golden brown.
- Now add the vegetables, turmeric powder, chilli powder, sambhar powder and salt, give a gentle mix, cook on a low flame the water in the vegetables will loose out.
- After 2 minutes add enough water to the vegetables and cook well.
- Add the grated coconut, mix it well and switch off the stove.

Serving Tips :
Serve with Rice and Sambar for lunch.

- Now add the Cauliflower,Salt and Turmeric Powder,give a gentle mix leave it for 2 Minutes,the water in the Cauliflower will comes out.
- At this stage add the Chilly Powder ,Cumin Powder,Coriander Leaves and Garam masala Powder,mix it well for 1 Minute
- Now add water and cook the Cauliflower well.
Cooking Tips :
Give it a stir from time to time. Add water if you feel needed..
Serving Tips :
Garnish with some Coriander leaves and serve hot.

- Allow the mixture to cool and grind it well.

Cooking Tips :
No need to add tamarind, tomato will give a sourness to the chutney.
Select Sour Tomatoes.
Coconut is also an optional.
Serving Tips :
Serve with Idli, Dosa or Rice as a side dish.

Potato(Aloo) and Peanut Tikki Sandwich
Aloo and Peanut Tikki Sandwich is one of our favorite recipes which I do so often, Tikki or Patties is a popular snack in India . Whatever made with potato(Aloo), me and my husband will enjoy it, I added Peanut as a main ingredient which enhances the taste, This Tikki is soft and crunchy with mild spices so children also loves.

Potato medium sized 1 No.
Chilli Flakes 1 tsp (or) Dry Red Chill 1 No.

Chopped Green Chilli 1 Tsp.

Peanuts(Groundnut) 1/2 Cup.

Bread for making sandwich.
For Binding:
Water 1/2 Cup.
Corn Flour 2 Tbsp.

- Boil the Potato and peel off the skin, mash the Potato well.
- Take the peanuts, dry red chilli and cumin seeds and roast it.
- Put the roasted Peanuts, dry red chilli and cumin seeds in the mixer jar and grind into coarse powder.
- In mixing bowl, add the mashed potato, powdered peanut, chopped onion, green chilli, coriander leaves, garam masala powder and Salt.
- In a bowl add water and corn flour; mix well without any lumps.
- Mix it Well, Make small ball and press it down, shape it like round cutlet.
- Dip the Tikki's one by one in the corn flour mixture and keep aside.
- In pan add oil, When the Oil is hot put the tikki one by one and shallow it well.
- In a Sandwich bread add some Vegetable salad, line the Tikki and add your favorite sauce grill the bread and serve.

For children don't add the green chilli.
Serving Tips :
Instead of sandwich you can serve only Tikki with some tomato ketchup or any chutney for children.

Eggless Cupcakes - Double Colored
Eggless Double Colored Cupcakes is a yummy and easy to make Vanilla Cupcake Recipe. This is my first cake recipe using Oven, I bake it for my little one who loves cake very much, my son love cream cake only, to attract him I used different colors. He enjoyed the colored Cupcake.

All Purpose Flour 1 1/2 Cup
Sugar 1 Cup
Yogurt 1 Cup(or) Buttermilk (Full Fat)
Sunflower Oil 1/2 Cup
Baking Powder 1 Tsp
Baking Soda 1/2 Tsp
Food colors a Pinch
Tutti Fruity 2 Tbsp
Raisins 1 Tbsp
Cashew Nuts
Vanilla Essence Powder 1 Tsp
Preparations
Cooking Tips :
Ensure that the yogurt or buttermilk in room temperature.
Serving Tips :
You can decorate with whipped cream and serve.

Preparations
- In a Mixing Bowl add the sugar and buttermilk mix it well until the sugar dissolves.
- To this buttermilk mixture add the baking powder and baking soda mix well and keep it aside
- After 2 minutes you will see the bubbles in the buttermilk mixture
- Sift the flour, add the vanilla essence powder, sunflower oil, tutti fruity, raisins, cashews and the buttermilk mixture
- Mix well and divide into 2 parts, then add the food color mix well.
- Pour the batter into cupcake tray
- Bake at 180 degree preheated oven for 20 minutes or till toothpick inserted in center of cupcake will come out clean.
- Cool it and serve.

Red Cabbage Stir Fry | Cabbage Poriyal | Muttaikose Poriyal
Red Cabbage Stir Fry or Muttaikose Poriyal is a simple and easy to make Recipe, normally I use green cabbage for our Tamil-Nadu style Cabbage Poriyal but this is the first time I tried red cabbage and it really tastes good. Difference between Red cabbage and Green cabbage is almost same but the health benefits in Red cabbage is slightly better than Green cabbage.

- In a Pan add Oil and heat it, when the oil became hot add Mustard seeds, spitted urad dhal and curry leaves.
- After spluttering add the finely chopped Onion, dry red chilies, chopped green chilies, Fry till the Onion became transparent.
- Then add the boiled Cabbage and salt and saute for few seconds.
- Add the grated Coconut and close the pan for 2 minutes in low flame.
- Red Cabbage Stir Fry is ready to Serve.

Buttermilk - 400 ml
Shallots(Small Onion) - 5
Curry leaves - 1 Strand
Mustard seeds(kadugu) - 1/4 tsp
Black gram(Urad dhal) - 1/4 tsp
Asafoetida(Hing) a pinch
Coriander leaves - 2 tsp
Ginger chopped - 2 tsp
Turmeric powder - 1/4 tsp
Oil - 1 tbsp
Ingredients to Grind
Raw rice - 1 tsp
Split Yellow Lentils(Toor dhal, Tuvaram Parupu) - 1 tsp
Chickpeas(Chana dhal, Kadalai parupu) - 1 Tsp
Cumin seeds(Jeeragam) - 1 tsp
Grated coconut - 1 Tbsp
Green chilly - 2
Preparation Method:
- Soak the Rice, Toor dhal and Chana dhal for 15 minutes.
- In a mixer grinder add the soaked Rice, Toor dhal, Channa dhal, Cumin seeds, Grated coconut and Green chilly grind into fine paste.
- In kadai(pan) add the Oil when the oil is hot add the Mustard seeds, Urad dhal, while spluttering add the Hing and curry leaves.
- Then add the chopped Onion and ginger fry it well.
- Add the Grinded paste mix it well.
- Finally add the Buttermilk mix it well and switch off the stove.
- Buttermilk Curry - More Kuzhambu is ready for serve.
Before adding the paste you can add Boiled Bottle-guard, white Pumpkin.
You can also add Okra(Ladies Finger) fry it in oil and add it.
Instead of Buttermilk you can use Yogurt diluted with water.

Fenugreek seeds pulao Rice recipe | Vendhaya Sadam
Fenugreek seeds pulao Rice is a popular Lunch recipe of Tamil people in South India we call it as Vendhiya Saadam in Tamil, I learned it from both my mother and mother-in-law both of them prepare it quite often and it's yummy and tasty. Any Veg. curry or Mutton Korma is a good combination for Fenugreek seeds pulao Rice. Fenugreek seeds are good for health, In India we use it for medicine.
Rice - 1 cup
Tomato - 1
Water – 2 cup
Salt - to taste
Fenugreek Seeds(Meethi seeds,Vendhiyam)- 1 Tbsp
Onion - 1
Green Chilli – 3
Garlic - 6 Pods
Coriander leaves - 1/4 cup
Mint(Pudhina) leaves - 1 strands
Ghee( Clarified butter ) – 1 tbsp
Salt - to taste
Cinnamon - 3 inch
Cardamom – 4
Cloves - 2

Rice - 1 cup

Ghee( Clarified butter ) – 1 tbsp

Preparation Method:
- Wash and soak the rice for 30 min.
- In a cooker add Oil when the oil became hot then add Cinnamon and Cardamom and fry until the raw smell goes.
- Add Cloves and Fenugreek seeds while the Fenugreek seeds spluttering you will feel the aroma of Fenugreek Seeds.
- Then add the Onion and Chopped Garlic fry until Onion became transparent.
- Add Green Chilli, Chopped Coriander and Pudhina(mint) leaves, Chopped Tomato and Turmeric powder fry until the raw smell goes.
- Then add 2 cups of water, Rice, Ghee and Salt.
- Close the lid and give 2 whistle Fenugreek seeds Pulao is ready.
Serving Tips :
Serve hot with Any Veg curry or Mutton Korma or even with Raita.
Cooking Tips:
Don't burnt Fenugreek seeds while frying, then your Pulao will be spoiled .
Don't add excess of Fenugreek seeds if more it tastes bitter

Carrot Yogurt Raita | Carrot Thayir Pachadi | Gajar ka Raitha
Raita or Raitha is a popular and healthy Indian salad recipe with Yogurt(Curd or Thair or Dahi) and Vegetables like Carrot, Cucumber, Tomato even with Cabbage or Spinach and flavored with variety of seasonings to make different types of Raita's. Raita is a very good side-dish for Biryani, Pulao, or even with Chapathi or Paratha. Instead of vegetables we can make Fruits Raita by using fruits like Pomegranate, Grapes, Mango, Dates or Pineapple which gives sweet and sour taste, Let us see how to make Carrot Raita.
Yogurt / Curd - 1 cup
Grated Carrot - 3/4 cup
Coriander leaves - 1 Strand finely chopped
Onion - 1
Green Chilly – 2
Chat Masala powder a Pinch(optional)
Salt - to taste

Preparation Time : 10 min's | Cooking Time : 10 min's | Serves : 3

Preparation Method:
- Take the Carrot and Peel off the skin then grate the Carrot.
- Take the Yogurt in a Bowl and beat well, Keep aside.
- Cut the Onions in Lengthwise or finely chopped.
- Finely Chop the Coriander leaves and Green Chillies.
- Add all the above vegetables with the Yogurt then Add some salt and mix well.
- Finally if you like add pinch of Chat masala
Serving Tips :
Serve as a side-dish with any Rice variety or with any Spicy Gravy for Roti or Paratha.
Cooking Tips:
If you do not like raw carrots then Par-boil the carrots for 1 minute, squeeze the water out and add into the yogurt.

Aloo Paratha – Spiced Potato stuffed Flat bread
Aloo Paratha is a north Indian breakfast recipe particularly very famous in Punjab region both in India and Pakistan. Aloo Paratha can be made in many different variations here I have tried in my style by using Maida (All Purpose flour) instead of wheat flour.
Ingredients for Dough
2 1/4 cup Maida (All Purpose flour)
1/2 tsp salt
1/4 cup Oil
Ingredients for Stuffing
2 boiled Potatoes(Aloo)
1 Cup Finely chopped Onion
1 tbsp Finely chopped Coriander leaves
1 tsp Chilli powder
1 tsp Garam masala
Salt to taste
2 tbsp Ghee( Clarified Butter )
Preparation for the dough
Add the salt and water with the Flour and mix well and make a semi-soft dough then add Oil and mix well until the dough becomes soft and Keep aside.
Preparation for the stuffing
Boil the potatoes and mash the potatoes.
Add the chopped onion, coriander leaves, chilli powder, garam masala, salt and ghee.
Mix the potatoes with the above ingredients well and keep aside.
Divide the prepared filling it into small balls.

Let us see How to Make Aloo Paratha
Knead the dough and divide into 5 portions.
Take one portion of dough and roll it flat as thin as possible with a rolling pin by dusting with some flour.
Take a small ball like Aloo Filling and place one portion of the filling in the center of the dough.
Close all the sides and seal tightly with dough.
Roll it flat again with a rolling pin by dusting with some flour.
In a hot flat pan, cook the paratha both sides by sprinkling some oil or ghee until both sides are golden brown, repeat this for the remaining dough to make more parathas.
Aloo Paratha is ready for eat, Serve hot.

Aloo Poori Masala / Potato Gravy
Aloo Poori masala also called Uralai kilangu masala in Tamil is one of the Traditional and Famous breakfast Recipe in all over India with some small variations but here I have Prepared Aloo Masala in South Indian style. This masala is a perfect side dish for Poori ( Deep Fried Chapati ).
Ingredients :

- 3 medium sized potato's
- 1 onion
- 1 small tomato
- 2 green chillies
- 1 dry red chilli
- Few Curry leaves
- 1/4 tsp turmeric powder
- 1/4 tsp mustard seeds
- 1/4 tsp urad dhal
- 1/4 tsp Bengal gram
- Coriander leaves
- Salt to taste
Preparation :
Boil the potato and mash it well, In a kadai(Pan) add Oil, when the Oil is hot add the Mustard seeds, Urad dhal and Bengal gram fry it well Now add green chillies, dry red chilli, curry leaves and coriander leaves Add the chopped onion and tomato, fry well until the tomato's are well cooked, Now add peeled and mashed Potato and Turmeric powder, mix it well.
Serve with Poori or Chapati

Delicious Fruit Salad with Butterscotch Ice cream
Fruit salad is a delicious dessert and easy to make within few minutes, we can make fruit salad in various ways but Here I mixed fresh fruits with Butterscotch Ice-Cream you can use any flavor, you can also use Dried fruits or Chocolate Chips as its topping to give it even more richer taste.
Ingredients :
1 Apple
2 Red Plums
Few Seedless Grapes
1 Banana
Tutti fruity(Optional)
Butterscotch Ice-Cream(3 scoops)
Preparation :
Wash and cut the fruits into small pieces,
In a bowl add all the fruits and add the ice-cream
Garnish it with tutti fruity, Optionally you can add Mixed fruit Juice with Fruit salad to help bring out its fruity flavor.
Note :
Before selecting the fruits make sure that the Fruits are ripe otherwise you can add Sugar, Honey or Caramel syrup for more taste.
