Onion Bonda / Chickpea Fritters

Onion Bonda is a crispy, yummy and tempting appetizer, which is a popular evening snack in South India particularly in Tamil Nadu and Andra. Hot bonda with monsoon or winter will be a perfect choice.




Ingredients:
2 1/2 cups Chickpea flour/Besan/Kadalai mavu.
1/2 cup Rice flour.
1 Finely chopped Onion.  
1 tsp Red chilli powder.
1 pinch baking soda.  
1 pinch Asafoetida/Perungayam (Optional)
1 strand Curry leaves.
2 Green Chilli's. 
Salt to taste.  
Oil for deep fry.  
Water as required.


Preparation :  
In a bowl add finely chopped Onion, salt, Besan flour, Rice flour, Red chilli powder, Baking soda, Salt, scratched green chilly, finely chopped curry leaves and Asafoetida  then add some water and mix nicely in thick batter consistency without making lumps.

Heat oil in a fry pan in medium heat, when it gets hot using the spoon drop a small ball like portion directly into the hot oil, fry in oil until the Bonda become golden in color.

Serve hot with tomato ketchup or any chutney. which is perfect monsoon delight.

Urad dhal Vada / Medhu Vadai / Ulundu Vadai


Medhu Vadai/Ulundu Vadai is a popular snack of South India. You can find it in all South Indian festivals; Let us see how to prepare tasty Medhu Vadai/Ulundu Vadai.

Ingredients
2 cups of Urad dhal/Ulundhu/ Black gram
1 Big Onion
3 Green chillies
½ inch Ginger
1 strand Curry Leaves
Coriander leaves
¼ tsp Asafetida
Salt to Taste
Oil to deep Fry

Preparation
Take skinless Urad Dall; wash and Soak in water for 1 to 2 hours.
Grind the soaked urad dal like a thick batter. While grinding mix water slowly like sprinkle the water (Don’t grind for long). Make the batter not too thick not too runny.
Finely chop the Onion, Green chillies, Ginger, Coriander leaves and Curry leaves. Mix all in the batter along with pinch of Asafetida and salt.
In a Fry Pan add oil and heat it, then take some amount of batter on your hand and make a small hole in the center using your thumb and drop it in oil.
Deep fry until become golden brown.

Serve hot with any chutney or Sambar or even with Ketchup.

Chicken 65 Recipe

Chicken 65 is a spicy deep fried chicken basically from Chinese origin but here I am going to prepare Chicken 65 in South Indian style ,We can make Chicken 65 either with both Bone and Boneless Chicken.

Ingredients

½ kg. Boneless Chicken
1 1/2 tbsp. of Red chilli powder
½ tsp. lemon juice
2 tsp. Corn flour 
1 Tbsp all purpose flour
Red food colour (a pinch)
Onion paste 3 Tbsp
½ tsp. of Turmeric powder
1 ½ tsp. Curry powder
1 tsp. of Ginger Garlic paste
1 Egg
Salt for taste
Oil for fry

Preparation
  • Wash and Cut the Chicken in medium size pieces, marinate the Chicken with egg, turmeric, red chilli powder, ginger garlic paste,curry powder,lemon juice,all purpose flour,onion paste,food colour and Corn flour.
  • Take one medium sized onion grind into smooth paste without adding water it well give nice texture and taste to the chicken. 
  • Mix it well then keep it aside for at least an hour (or) refrigerate it for 30 Minutes.
  • In a fry pan add oil and heat it.
  • Deep fry the chicken until became fully cooked and brown in color.

Vegetable Samosa an Indian Snack


Vegetable Samosa is another famous snack from India you can find this Samosa varieties in all over the India but the method and taste may vary based on the different areas like South  India and North India. even it is famous in Pakistan, Srilanka  and Arab countries also. let us see how to prepare Vegetable samosa in South Indian style.

Ingredients
2 cup Maida flour (or) all purpose flour
1 Carrot
1 potato
1 green pea
1 Onion
Salt for taste
1 pinch Baking soda
Coriander leaves small amount
½ tsp Garam masala(Optional)
½ tsp Chili powder
Oil for fry

Method of Preparation

Boil the Carrot, Potato, and Green peas. Mix boiled Carrot and Potato with green peas.
In a pan add some oil and add onion and fry it until the onion become transparent then add Salt, Garam masala and Chili powder fry until the raw smell goes finally add Coriander leaves now the stuff is ready make small balls and keep aside.
In a bowl add Maida, salt, baking powder and required amount of water
Mix it like thick dough and roll them flat with a rolling pin cut into a square pieces.
Take each piece and place the Vegetable mix in the middle and fold like a triangular shape, now Vegetable Samosa is ready for fry; deep fry it until become golden brown and serve hot with any chutney or ketchup 

Note: Here I used few vegetables, you can use whatever vegetable you like.

Fried Cornflakes chicken

Fried Cornflakes chicken is a different kind of recipe with the spicy Indian masala and Crispy Cornflakes, Children's like this taste. try this recipe and give me your feedback

Ingredients
5 Chicken drum stick
1 cup Cornflakes
¼ tsp Turmeric powder
2 tsp Chili powder
1tsp Ginger garlic paste
1 tsp Pepper powder
1 tsp Maida or All purpose flour
Salt for taste
1tsp Chilly chicken powder (optional)
1 Egg
Oil for deep frying
 
Preparation 
  • Remove the skin and wash the chicken well
  • Marinated  the Chicken drumstick with Turmeric powder, Chili powder, Ginger garlic paste, Pepper powder, Maida and Salt.
  • Keep the chicken aside for 3 hrs
  • Crash the cornflakes well with dough roller
  • In a plate pour the egg add beat it well 
  • Take the marinated chicken dip it in the beaten egg and the roll it in cornflakes, then deep fry it well.
Cornflakes chicken ready.

Onion Pakoda a Crispy Indian Recipe


Onion Pakoda is a crispy and spicy appetizer, which is a popular Tea time snack in South India particularly in Tamil Nadu and Andra same like fritters.  Preparation of this recipe is not a tough one; let us see how to prepare Onion Pakoda...

Ingredients:
1 1/2 Chickpea flour/Besan/Kadalai mavu
3 tbsp Rice flour
2 Lengthwise sliced Onions
1 tsp Red chilli powder
1 pinch baking soda
1 pinch Asafoetida/Perungayam
1 strand Curry leaves
2 Green Chilli's 
Salt to taste
Oil for deep fry
water if required

Method of Preparation :
Cut the onion into thin length wise pieces. Add salt to it. Keep aside for 10 minutes. Add Besan, Rice flour, Red chilli powder, Baking soda, Salt, scratched green chilly and Asafoetida to the Chopped onion and mix nicely.
Don't add water as the Onion with salt leaves a good amount of water. If necessary just sprinkle a few drops of water and don't make the batter too thin.
Heat oil in a fry pan once heated put the curry leaves and fry for a minute then take fried curry leaves and keep aside. Fry the Onion mixture in oil until the Pakoda become brown in color.
Garnish the Onion Pakoda with fried curry leaves and Serve hot.

Chicken Leg Fry




Ingredients

5 pieces of Chicken drumsticks
½ tsp of Tumeric powder 
3 tsp of Red chilli powder
½ tsp of Pepper powder
1 ½ tsp of Chicken Curry powder 
1 tsp of Ginger Garlic paste
Salt for taste
Oil for fry

Preparation
  • Wash the Chicken drumsticks, add all the above mentioned powders.
  • Mix it well then keep it aside for at least an hour (or) refrigerate it for 30 Minutes.
  • In a fry pan add oil and heat it.
  • Deep fry the chicken until became fully cooked and brown in color, tasty leg fry is ready.
  • Serve hot.

Bread Toast with Egg and Milk



Bread Toast with Egg and Milk is a very tasty and nutritional recipe particularly for children's; It take very less time to prepare and I'm happy to share one of my favorite recipe with you.

Ingredients

10 no. of white Bread slices
4 no. of Egg
1/2 cup of Milk
1/2 cup of Sugar
2 tsp of Ghee
2 tbsp of Oil 


Method of Preparation

In a big bowl beat the eggs, milk and sugar until the sugar gets dissolve

Dip the bread slice in the mixture until it observers the mixture.

In a normal heated pan pour some oil and put the soaked bread slice.

Pour some ghee and fry both sides until getting the golden brown color.

Bread Toast with Egg and Milk is ready.

Egg Omlet Recipe / Muttai Adai




Ingredients :

3 no of Egg
1 no of finely chopped Onion
3 no of finely chopped of Green Chilly 
1 bunch of finely chopped Coriander Leaves 
1/2 Tsp of Turmeric Powder 
1 Tsp of Sambar Powder(Optional) 
1 Tsp of Pepper Powder
Salt for taste 3 Tsp of Oil
Preparation:
  • In a pan add oil, finely chopped onion, green chilly, coriander leaves then fry it well until the raw smell goes.
  • Then add the all above powders fry it well for 5 more minutes and keep it aside.
  • Now in a separate bowel add the eggs, fried onion mixture and salt then mix it well.
  • In a dosa pan pour the mixed ingredients like dosa and cook well both sides
  • Tasty Special Egg Omelet is ready

Serve with any rice varieties

Cauliflower Manchurian / Gobi Manchurian

Cauliflower Manchurian / Gobi  Manchurian is a Chinese recipe and the one I prepared with the mix of Indian style as Indochinese.  For preparation there are two process first to prepare Gobi Fry then make Sauce and mix Manchurian with the sauce as I mentioned below.


Cauliflower Manchurian Gobi  Manchurian
Ingredients for Gobi Fry

One medium size Cauliflower florets
1 tsp of Red Chilli powder
1/2 cup of Corn flour
1/4 tsp of Black Pepper powder
1 tbsp of Ginger Garlic paste 
1/2 cup of all purpose flour / maida
1 tbsp of Soy sauce 
Pinch of Ajinomoto(optional)
Salt for taste
Oil for deep frying
Ingredients for Sauce 


3 no of Green chilli 
1 tbsp of Corn flour 
4 no of Onion
4 tbsp of Tomato sauce
1 tbsp of Soy sauce
1 tsp of Chilli sauce
10 cloves of Garlic 
One inch long piece of Ginger
Small bunch of Spring onion 
Pinch of Ajinomoto(optional)
1/2 tsp of Sugar
Salt for taste
1 tbsp of Oil

Preparation of Gobi / Cauliflower Manchurian Fry
In a big vessel, add water and boil with pinch of turmeric powder and salt, add cauliflower florets in boiling water. Switch off the Stove and keep the pan closed for five minutes; make water to drain water and keep the half cooked cauliflower florets in open air to cool. Now in a bowl mix corn flour, all purpose flour, red chili powder, pepper powder, salt, ajinomoto, ginger garlic paste then add water little by little to make a thick batter , add soy sauce finally and mix well.
Heat oil in a pan, dip half cooked cauliflower florets in the batter and deep fry till crisp.
Preparation of Sauce for Gobi/Cauliflower Manchurian
Finely chop onion, ginger, garlic, green chilli and the bulbs of spring onion.
Heat a pan with oil and add the above chopped items and fry till become soft and color becomes golden, now add salt, ajinomoto, soya sauce, tomato sauce, sugar and some water then boil it for few seconds, now mix corn flour with little water and add in the boiling sauce, cook for few more seconds; corn flour helps to make the sauce thick and gives a glace look to the sauce.

Serving
Mix enough quantity of sauce with deep fried cauliflower
Garnish with some spring onion leaves and serve.
